Custom configure access rights in data templates. Instead of editing rights case-by case, using the data template access rights allows you to systemically produce content items that have the access rights configured.
At the Sitecore Security Editor:

Assign the following access rights to the category content item standard values
for each respective role. Any content item created from this template will have
identical access rights:

Optional: Enable the inheritance of access rights to the product content items
for the category:
